Look into getting some sort of government funding as you will not be viewed as unemployed, perhaps it may work the same as a type of carer's allowance.

For you the best way is to get a charter tour to Vegas. The charter company rents the plane at a single price and then they get to sell the seats cheaper than a commercial airline. Check with a travel agent for the best prices.

If you want to leave from NY NCL has the 7day cruise on NCL Gem. Also if you want to avoid the plane you can consider maybe a cruise from Baltimore the drive is not that far.

There aren’t going to be any three or four-day cruises from NYC at this time of year – they can’t go anyplace warm in that timeframe. In the summer, you can sometimes find short cruises to Canada from NYC.
